This is a simple chicken curry recipe adapted from the book The Complete Book of Curries by Harvey Day.
The Ingredients
- 4 chicken breasts
- 2 finely sliced onions
- 4 sliced garlic cloves
- 2 tbsp olive oil
- 1 cardamon pod
- 2 cloves
- 1 two inch stick of cinnamon
- ½ tsp ground turmeric
- ½ tsp ground ginger
- ½ tsp ground cummin
- ½ tsp ground chilli
The Recipe
- Fry the onions, garlic, cloves, cardamon and cinnamon in the oil.
- When the onions are golden brown add turmeric, ginger, cummin and chilli . Mix well and cook slowly.
- Add the chicken and fry in the curry mixture stirring to prevent it from burning.
- Add enough water to form a thick sauce.
- Cover and simmer until the chicken is cooked (around 30 minutes).
- Squeeze a little lemon juice over the curry before serving.
Thoughts and observations
This was a nice curry bit it was a touch bland. I think I'd double the spices next time.
