Simple chicken curry

This is a simple chicken curry recipe adapted from the book The Complete Book of Curries by Harvey Day.

The Ingredients

The Recipe

  1. Fry the onions, garlic, cloves, cardamon and cinnamon in the oil.
  2. When the onions are golden brown add turmeric, ginger, cummin and chilli . Mix well and cook slowly.
  3. Add the chicken and fry in the curry mixture stirring to prevent it from burning.
  4. Add enough water to form a thick sauce.
  5. Cover and simmer until the chicken is cooked (around 30 minutes).
  6. Squeeze a little lemon juice over the curry before serving.

Thoughts and observations

This was a nice curry bit it was a touch bland. I think I'd double the spices next time.
