Mandooney sent this recipe in and suggested that it went great as a bonfire night dip with the Mashed Bombay Potatoes.
The Ingredients
- 4 large tomatoes quartered
- 1 red pepper quartered and seeded
- 1 red chilli seeded and finely chopped
- 1 thumb sized piece of ginger peeled and sliced
- 2 good dashes of lemon juice
- ½ teaspoon ground coriander
- 1 tablespoon sugar
The Recipe
- Put all the ingredients into a blender and blitz
- Transfer into a saucepan an bring to the boil, reduce heat and simmer untill reduced to a nice salsa consistancy.
- Cool before serving
Thoughts and Observations
I made this to go with some simple Thai style battered pork I was making and it worked well - so much so that Miranda ate nearly the whole amount despite also having a simple sweet and sour sauce to go with it and rice too!
I added more sugar and more chilli (two of the little red devils I grew last year instead of one) but I'd suggest holding off until the sauce has reduced before commiting to more of anything.
