Dead Simple Bombay Potatoes

This is a wonderfully simple Bombay Potatoes recipe with easy to find ingredients.

  1. Boil or microwave the potatoes until tender and then plunge them into cold water.
  2. In a frying pan cook the mustard seeds in the oil until they start to pop.
  3. Stir in the chilli and turmeric.
  4. Add the potatoes and gently stir until they are coated in the oil.
  5. Continue to cook until the potatoes begin to go crisp.
  6. Serve garnished with the coriander.

Thoughts and Observations

Adjust the amount of chilli powder to your taste.
