Curry Bombay Potatoes

We wanted something simple that wouldn't overpower our main event and would leave the rice with some flavour. This recipe worked well given our needs.

  1. Cook the potatoes eithe rin boiling water or microwave until tender
  2. Heat the oil in a pan and fry the onion with the curry powder for 1-2 minutes.
  3. Add the potato, cumin, and coriander. Fry for until crispy

Thoughts and observations

Okay it was a little dry but then I think we went too far with the "cripsy" aspect of it. It was damn tasty though.

I really wanted to add something a little more spicy but Miranda wasn't keen. Still, this is an easy one and the curry powder you choose can be whatever you want (or make your own).
