We wanted something simple that wouldn't overpower our main event and would leave the rice with some flavour. This recipe worked well given our needs.
The Ingredients
- 1 or two potatoes, roughly diced
- 1 tbsp olive oil
- ½ onion, diced
- 2 tsp curry powder
- ½ tsp cumin seeds, crushed
- ½ tsp coriander seeds, crushed
The Recipe
- Cook the potatoes eithe rin boiling water or microwave until tender
- Heat the oil in a pan and fry the onion with the curry powder for 1-2 minutes.
- Add the potato, cumin, and coriander. Fry for until crispy
Thoughts and observations
Okay it was a little dry but then I think we went too far with the "cripsy" aspect of it. It was damn tasty though.
I really wanted to add something a little more spicy but Miranda wasn't keen. Still, this is an easy one and the curry powder you choose can be whatever you want (or make your own).
