Pilau rice

We've been using a spice mix to make Pilau rice for some time but decided it was time to make our own...

The Ingredients

The Recipe

  1. Heat the oil in a medium pan and sauté the onion for 1-2 minutes until soft and translucent.
  2. Add the garlic and heat for 1 minute.
  3. Stir in the turmeric , green pepper , tomato and cardamom pods, cook for a couple of minutes.
  4. Stir in the rice and then cover with boiling water. Bring to the boil, then reduce the heat and simmer until the rice is tender.
  5. Stir in the fresh coriander , remove from the heat and then transfer to a serving plate to serve.

Thoughts and observations

It was nice, really nice, and I'd recommend everyone that enjoys something more than plain rice give it a try.

I think I'd use less green pepper. We used one of our home grown peppers and I think it was too powerful for this.

It went wonderfully with our curry.
