We've been using a spice mix to make Pilau rice for some time but decided it was time to make our own...
The Ingredients
- 1 tsp vegetable oil
- ¼ red onion, peeled and chopped
- 1 garlic clove, peeled and chopped
- pinch of turmeric
- ¼ green pepper, de-seeded and diced
- ½ tomato, diced
- few cardamon pods, crushed
- 3oz easy-cook rice
- handful of chopped fresh coriander or some dried coriander, whichever you have
The Recipe
- Heat the oil in a medium pan and sauté the onion for 1-2 minutes until soft and translucent.
- Add the garlic and heat for 1 minute.
- Stir in the turmeric , green pepper , tomato and cardamom pods, cook for a couple of minutes.
- Stir in the rice and then cover with boiling water. Bring to the boil, then reduce the heat and simmer until the rice is tender.
- Stir in the fresh coriander , remove from the heat and then transfer to a serving plate to serve.
Thoughts and observations
It was nice, really nice, and I'd recommend everyone that enjoys something more than plain rice give it a try.
I think I'd use less green pepper. We used one of our home grown peppers and I think it was too powerful for this.
It went wonderfully with our curry.
