This is quick and easy. Gather the ingedients, throw them together, give them some time to get along and serve. It pretty much takes care of itself.
The Ingredients
- 3 tablespoons sunflower oil
- 1 teaspoon mustard seeds
- 1 pinch ground cumin
- 1 teaspoon turmeric
- 1 teaspoon ground coriander
- 1 teaspoon garam masala
- 1 Red chilli roughly chopped
- 1 ½ tablespoons fresh ginger , peeled and grated (or very lazy ginger )
- ½ cup butter
- 1lb new potatoes
- 4 tomatoes flesh diced
The Recipe
- Parboil the potatoes until they are about half done.
- Heat the oil in a pan and fry the spices for a few minutes.
- Add the butter, then the potatoes making sure they are completely coated in the spicy mixture.
- Cook for about 10 to 15 minutes, then stir in the tomatoes.
- Optionally add a teaspoon of flour to thicken the sauce.
Thoughts and observations
It was good. It was simple to make and not a lot to go wrong. I’d do it again.
Miranda thought it tastes to much of mustard so perhaps only putting in half a teaspoon of mustard seeds would be better. Other than that we all enjoyed it.

Those bombay potatoes look awesome and fairly easy to make. I just started using sunflower oilwhen cooking and i really enjoy it. I find it is a healthier option than other oils. I am going to try and cook these potatoes this week, thanks for the recipe.

great recipe I did these for a boxing day meal along with other curries but the bombay potatoes went down a storm many thanx
