Mashed Bombay Potatoes

When I first found this recipe I didn’t like the idea of it because it seemed so far removed from my previous attempts at Bombay Potatoes. But we planned a nice simple curry and decided that it was time to explore the outer reaches of our favourite curry accompaniment. I hope you enjoy it as much as we did.

The Ingredients

The Recipe

  1. Boil, or microwave, the potatoes until well done.
  2. Fry the finely chopped onions on high until they start to go brown.
  3. Add the chilli and cook for 1 minute or so.
  4. Add the turmeric, cumin and mustard seeds and cook for 1 minute or so.
  5. Mash the cooked potatoes with the fried onions and spices until fairly smooth.
  6. Divide the mash into 4 and form into burger shaped pieces.
  7. Fry the mash potato burgers for a couple of minutes on each side, or until lightly browned.
  8. Serve with a yummy spicy curry and some plain rice.

Thoughts and Observations

I'm really struggling to think of something I didn’t like about this. It was fairly quick and easy but also lots of fun to make. It felt like we were really experimenting making these ones but instead of throwing the experiment away at the end we devoured it. It was yummy and is highly recommended.

I think this one would be great cooked for the evening meal and, if you make too much, used cold for a lunch the following day with a green salad…I may just try that.
